Happy 2008!!! We hope it is a happy and healthy one for all of you!
It has been an interesting holiday season for us down here in Cayman. The weather here is always sunny and in the 80s, and so it didn’t feel like Christmas at all. The hotels (and many of the locals) put up Christmas lights, but they just seem a bit different when they are on a palm tree.
We had a very nice Christmas down here. It started on Christmas eve, when Andrea and I stayed in for a nice romantic dinner. She loves to cook, but we rarely cook fancy meals, so holidays are a good chance to do some real cooking. On Christmas eve she made is beef wellingtons, that were just fantastic. Beef tenderloin, cooked inside a pastry shell, with , spinach, portobello mushrooms, carmelized onions and a brandy sauce. It was wonderful, and it was great for us to just have a quiet night in together.
We started Christmas day with a dive, which is always fun, and then we had friends over for a big meal. Again, Andrea outdid herself. She made a delicious turkey, a corn souflet, cornbread-apple-mushroom stuffing and roasted potatoes. Add in her famous spinach dip as an appetizer, and her home-made white chocolate cheesecake (with chocolate brandy sauce on top) as dessert, and everyone was very full and very happy. Durin the day, Santa himself made an appearance on the island, driving through the streets on a fire truck. Now, being Jewish, I’ve never really paid attention to Santa before, so I was very surprised to learn that he was black. Who knew?!?!?! We capped off a great day with a night-dive. For the past few years we’ve had Christmas with Andrea’s parents, and I have to admit I missed that a bit, because that’s always a nice time, but our Cayman Islands Christmas was a very good substitute for it!
Our New Year’s Eve was also nice, and also on the low-key side of things. We had some people over for dinner, and then went out to a small party for a while, before heading out to the beach to watch fireworks at midnight. Not a bad way to ring in the new year!
2007 was a fantastic year for us, and it brought HUGE changes and lots of fun and adventure. We are very excited to see what 2008 has in store for us. We hope it’s a great year, but we know that no matter what it will be special because we’re facing it together, and we’re living our dreams. We hope that all of you get a chance to do the same in 2008!
